Prepare Spinach
In a pan, boil water before adding spinach to it. Blanch for 2-3 mins before adding to cold water. Blend into a smooth puree with ginger and chilli.
Kneed the Dough
Take a bowl and add whole wheat flour, ajwain, and hing. Add spinach puree and knead a smooth dough. Let it rest for 10-15 minutes.
Divide the dough into small balls and roll them into small circles. Flaten using a rolling pin. Avoid using excess flour while rolling.
Roll Pooris
In a pan, heat oil. Then gently slide a poori into the oil and fry until it puffs up. Flip and fry on both sides. Place on a paper towel and serve hot
