500g mutton 2 onions 3 tomatoes pureed 1 tbsp ginger garlic paste 2 green chillies 1 cup yoghurt 2 tbsp ghee 1 tbsp cumin seed
2-3 cloves 1-inch cinnamon 2 tsp red chilli powder 1 tbsp turmeric powder 2 tsp coriander powder 1 tbsp garam masala Coriander leaves for garnish 1 bay leaf
Heat oil in a pressure cooker. Add cumin seeds, bay leaf, cloves, and cinnamon. Once aromatic, add onions and cook until golden brown.
Add ginger-garlic paste, green chilies, and saute. Add in tomato puree, turmeric, chilli powder, coriander powder and salt. Cook until oil separates.
Add mutton pieces and mix well with the masala. Saute for 5-7 minutes, then add yoghurt and cook for another 5 minutes.
In the cooker, add 2 cups of water. Cover and pressure cook for 3-4 whistles or slow cook for 45-50 minutes until the meat is tender.
Sprinkle some garam masala, mix well, and let it rest for a few minutes. Garnish with fresh coriander leaves and serve hot with rice or roti.
